Working with PDF is always tricky. Most CAT tools can only work with true PDF, i.e. you can copy and paste the text. If you don't have true PDF, then you have to use OCR.

i think most of prozians got their jobs from translation firms/agencies, cmiiw. if you don't like working with them, then you should work with end-client directly.
looks like you need virtualization program. you can try the freeware virtual box.
i don't see the benefit of installing windows on another windows though.
what i do is:
- sign on a white piece of paper
- scan the signature
- make the background transparent then save it into gif or png
- select it as stamp in the pdf editor/viewer
