Incidi la pelle del petto d’anatra, cuoci nel forno a vapore con modalità a 58° per quattro ore e lascia quindi raffreddare velocemente in una boule con acqua e ghiaccio.

Is this simply a large bowl?

ice bath

I would translate "boule con acqua e ghiaccio" this way.

"Additionally, you can cook the duck breast the day before. Once the sous vide is completed move the vacuum-packed duck to an ice bath to lower the temperature of the duck to avoid it continuing to cook. "

boule

For me it doesn't translate, it stays that way in English too.
The boule in the kitchen is a sphere made of high quality porcelain that includes a table service for two people. A photo (in Italian):

neutral EleoE : Una boule è una ciotola, in inglese bowl.

glass bowl / boule

Keep as is, or in English this would be a glass bowl, and in this context with some ice in it to expedite the cooling process.

Carve the skin of the duck breast, steam in the oven at 58 ° for four hours and then let cool quickly in a boule with water and ice.
