German term

ausgebaut

German to English Marketing Wine / Oenology / Viticulture Austria, wine

I only noticed after copying and pasting that my first example is pretty similar to your second sentence, i.e.

vergoren = fermented
ausgebaut = aged

4 KudoZ points awarded for this answer. Comment: "Thanks everybody, I hesitated between aged and matured, but I think aged is probably more common."

fermented

or you could consider "cellared"

"Barrique Fermented Chardonnay 2002
A rich aromatic wine with flavours of melon and pineapple balanced by toasted oak characters. Wonderful drinking qualities now which will continue to develop with further cellaring. "
