If you're producing organic chorizo, (as might be my case!), you have to be able to produce copies of the organic certification of the producers of the ingredients, and of the "volantes" which accompany each individual delivery. To go back one step, for our pigs, we receive a copy of the permanent certification of all our suppliers of grain etc, along with individual declarations alongside each delivery. Huge amount of paperwork as you can imagine.
All this presuming that cerificados is a typo for certificados!

PS For the record: in Spain, the terms "ecológico" and "biólogico" are those used for organic, and are designated by EU legislation. Orgánico is considered an anglicism here.
