before the glue is applied the spines are cut or ground/milled away allowing the glue to penetrate more deeply - hence "fresata"
(I used to work for a printing company in Italy and we did exactly this kind of work for a Swedish customer - in the printing shop they called it "fresata", on the invoice it was "perfect binding")

This is actually the glued or unsewn (as opposed to stiched/sewn) binding method typically used for softcover/paperback books.
