Mark I think this means that fashion "dictates" how the wine should be and that this château avoids falling into that trap. I'm toying with "bowing and scraping", "making concessions"- that sort of idea... Or avoids being "ensnared by fashion" or "harnessed to trends" etc.

Could arrangements refer to a new blend of grapes, or a new way of making wine which is temporarily in fashion? If the brochure is speaking strongly about the wine's identity, then I think subservience (implicity to fashion) would work, but I am not sure about the possible meanings of arrangement.

Hi Ann Yes, something about fashions not distracting it from /compromising its true identity; the tone of the brochure is rather grand.

"deals and favors" comes to mind, but does not seem to be the right tone for such a brochure. Reciprocal agreements?

In this context, it is not a question to follow the rule that obliges one to accept, (to agree) with the idea of making arrangements and kindnesses, but on the contrary to naturally endeavors to preserve his identity.
