Foundation solera

The starting point for the process.

These are all top notch Sherries, easily the equal of many of the record breaking Clarets and Burgundies in terms of quality, and often much older, so amazing value. But this age thing is a problem. Most fine wines carry a vintage date so one knows how old they are, but Sherry very rarely does, and one comes across it for sale with the solera foundation date mistaken for the vintage, and a price to match, even though the word “solera” appears on the label! A quick glance at the bottle would tell most people the wine could not possibly be that age – I saw an “1830” with a plastic top! I believe it is generally ignorance rather than dishonesty.

The system of maturation is called solera. Take fortified base wine, fill the butt, and set this butt on the floor of the warehouse called bodega. We just founded a new solera. Next year fill another butt with a new base wine and set above the original one. Repeat the procedure 3-14 times. Solera is made.
Note from asker:
It may be common practice, but, personally, I don't think calling it a solera helps the reader ... I'd prefer something everyone will understand (first vintages)

agree pawlik : I think "foundational solera" is more common, meaning dating to the foundation of the bodega in question, rather than the solera foundation date as suggested in your first reference.

Thank you, but I have added some refs that show that the solera is a base wine that is founded.

This Amontillado Solera Fundacion is one of the very best. It is taken, as its name maybe gives away, from the ***foundational solera*** and must be of a ripe old age, but wears its years with incredible grace. I may have been softened up a bit by the four top wines that preceeded it, but my notes are extremely, er, enthusiastic.
