However, those webrefs clearly refer to apparatus used for the transportation of pork loins, so 'long' should probably read 'loin'. Then, a G-search for "loin box" turns up this patent for a 'loin box':

Although the purpose of that loin box is not mentioned in the patent, it would appear to be suitable for the transport of pork loins.

Hence, IMHO, longière should read longère, and it means 'loin box' in English.

What remains unclear without more context is whether the longère is actually a box (as in the patent linked above) or some kind of trolley as in Emmanuella's link.

It's amazing just how many specialized items of equipment can be found in abattoirs, specific items for practically every part of an animal!

loin cart - Photo below from https://www.bidspotter.com/en-us/auction-catalogues/coau/cat... a site auctioning abattoir equipment, in this case the "Surplus Assets of Johnsonville Sausage, LLC".

'Cart' seems to be a popular word in the US for what I would call a trolley.
