French term

défûtage

French to English Other Food & Drink Food Industry - Dairy
I am translating a set of documents for a manufacturer of dairy products. This term appears in a table in relation to a cheddar making workshop under the heading “equipment” Cave de refroidissement, avant défûtage”. The term “défuteur” also appears. I think if this were a distillery the translation would be “unkegging” but I am not clear what is correct in this context. I presume it relates to a liquid product (milk or whey).

Bourth Dec 15, 2022:
How true it is I don't know, but this site claims that Cheddar is not produced in France, only imported.
https://www.annieandre.com/adventures-in-france-3-cheddar-ch...
Having read that, I feel lucky to have two cheese shops within 15km of home that sell English and Irish farm cheddars, along with Stilton, Irish Crozier blue, Shropshire blue (from time to time). That on top of the little waxed cheddars in Leclerc.
Althea Draper Dec 15, 2022:
I was wondering if it had something to do with the demoulding (removing from the moulding hoops) and turning of the rounds of cheddar which is done in the forming and pressing part of the process. Alternatively, it might have something to do with removing the rounds from the cloth/wax that it's wrapped/sealed in during aging.

This French site talks of
"Participer aux différents étapes de la fabrication du cheddar

Assurer le moulage et le retournement des fûts de fromage

Assurer le défutage ainsi que l'étiquettage des fûts à expédier selon les consignes données"

Sue Davis (asker) Dec 15, 2022:
It's just that this is a factory in which Cheddar is produced therefore I assumed they the term would refer to the milk used to produce the Cheddar rather than the cheese itself
Sue Davis (asker) Dec 15, 2022:
Thanks Liz that's most helpful
Sue Davis (asker) Dec 15, 2022:
Hi Conor - it is in France
Conor McAuley Dec 15, 2022:
Can you say whether the workshop is located in a particular region of France?

Or in Quebec?

Baffling!

I'm too verbose for this to go in the Discussion box so I'm posting this here. It is not for grading since I see Liz beat me to it (and should post an answer).

To see what a gigantic and specialized industry cheddar cheese processing is, have a look at this site:
https://www.loosmachine.com/markets/dairy-cheese/barrel-bloc...
where about 2/3 down you will find a photo of what I take to be cheddar barrels [corrugated boxes, see below] on a pallet.

" “The Cheddar 40-pound block is a ready-to-eat product that has to have a certain flavor and melting characteristic and body characteristic to be put in a shred, in a slice, or in a bar,” he described. “A BARREL IS GOING TO BE FURTHER PROCESSED AND USED AS A BASE FOR PROCESSED CHEESE where, by nature, it’s being made into a melting cheese. You can do a lot of variations in your formulations to create that.”
[...]
IS A BARREL OF CHEESE ACTUALLY IN A BARREL?
“It used to kind of resemble a chemical or fluid barrel and it was metal, but since then, it has gone to a PLASTIC BAG AND A CORRUGATED BOX with multiple dimensions,” Epprecht said. “It was very much a barrel at one point, but now it’s a cylindrical 500-pound block of cheese that is usually vacuum-packed.”"

These barrels of cheddar will have to opened for processing. On the Loos site (above) there is a picture of a 'barrel picker' which appears to be removing the tubular cardboard 'barrel' from the cheese. 'Picker' appears to be jargon for equipment for handling steel drums, etc., i.e. not in the sense of 'select' but in the sense of a 'picker-upper', to be familiar.

I haven't found a description of this operation, which I take to be one where the outer enclosure is withdrawn for re-use rather than being slit open, for example, but it could be something like 'stripping the cheese' (of its packaging/barrel), 'removing the (outer/cardboard) tube' or, since it seems there might be plastic inside the cardboard, simply 'opening barrels'.
