The definition of panfish in my Webster's is "any small, fresh-water nongame food fish as a perch or sunfish, usually eaten panfried."
I don't agree with the previuos answer because when we think of "frittura" in Italian, we're talking about very different fish from the one I get under a "panfish" research in the Internet (see link below).
It depends on how "precise" you need to be (is it a technical fish translation or a recipe?). A somewhat "loose" translation could be "pesce persico" (=perch) and/or "persico sole" (=sunfish). Hope this helps. Patricia Ferreira

pesce d'acqua dolce

panfish is fresh water fish usually cooked in a pan, including perch, crappies, blue gills (result of a research on Altavista using "panfish"). Also "pesci d'acqua dolce" (plural) is possible; it depends on the context.
"Frittura" refers to salt water fish.
